Ode to the Po
Poblanos are a happy medium – not too hot for Hubs, but gives a nice little tingle in salsa and chilli, which is the star of the show tonight (and this weekend, leftovers!) I’m taking the night off homework to make it – I’m about cross-eyed trying to keep up with 4 classes, and I miss cooking.
We started using no-salt everything in April last year after my father-in-law’s heart attack and afterwards, heart failure. It’s Mrs Dash everything now, and when you supplement it with some of the Po & friends, its pretty legit. Not gonna lie, I added a bit of cheese.
This fella was getting wrinkly in the bottom of my produce bin, and rather than retire him to the trash I decided to throw him in the pot. Nice attractive little green specks in the mix – we’ll see if Hubs asks questions.
One note of caution – don’t forget to thoroughly wash your hands once you’re done with Mr Po, because guaranteed you will touch your eye or mouth afterwards and remember, intensely and in graphic detail, that you just cut up a hot pepper. Now I’m gonna go wash my hands and rinse my eye out with Hub’s contact solution, because I forgot.
