Red-Handed (Let the Beet Drop)

When I’m putting dinner together in the InstaPot I can’t help but toss some root vegetables in there too – they cook so fast! I added them later to this beautiful sheetpan and this will be dinner tomorrow night. I’ll save the tops for a salad later.

I did remember to cover my left hand up as I was chopping the butternut squash this time, because it leaves this weird film on your hands that’s hard to get off. Nevermind the beet stains all over the rest of me……. I love purple, so its not a big deal. A little olive oil and balsamic vinegar toss and it might be fit for consumption by the household carnivore, who when offered anything with Brussel Sprouts tends to whine a bit. Just pick them out! I like the green contrast – it’s Christmas-ey.
